Cake Icing Recipe

Icing also has another name called as frosting usually used to decorate the baked products such as cake and cookie. Cake icing is the great frosting recipe paired with the delicious cake to enrich its taste and look.

Cake icing recipe usually consist of two ingredients that is the beaten egg whites, boiled sugar syrup and these are softer when compared to the icing added with butter hence these are fat free and can hold up humid weather. Still they dry up very fast, so we have to apply it immediately to the cake. Be sure to keep up all the ingredients free from grease to ensure the egg whites will whip up properly. Any bit of yolks that gets into the egg white mixture will also inhibit the whites from whipping. Have the egg whites at the room temperature when you begin. You will need to carefully monitor the room temperature of the sugar syrup to achieve the ideal consistency. Overheating it will cause the icing to harden quickly. You can rectify this problem by adding 2 tablespoons of boiling water. When using candy thermometer just keep in your mind that the temperature will raise initially at the beginning. Don’t get fooled, because once the mixture gets hot the temperature will rice quickly.

Icing the cake
When covering the outside of the cake with icing we have to be careful that we spread the icing smoothly. If the icing is too thick you will have crumbs on the cake.
Most icing is thickened by adding confectioners’ sugar and thinned by adding milk for spreading. While frosting the cake, glide a metal spatula back and forth on the cake to avoid lifting crumbs into frosting. It can take a bit of practice to achieve a smooth finish.

Colouring the icing
You can colour your icing either by using paste or powder food colouring. Liquid food colour won’t give you the intensity. It only takes a little dab food colouring to go a long way, so start with a dab. You can always darken the colour by adding more, but if add too much then you have to add more icing again to dilute it. So stick to a consistent intensity. If you start decorating your cake with light shades continue with the same maintain the brightness throughout the cake.

Quick Cake icing recipe
Ingredients:
• 4 cups powdered sugar
• 3 tablespoon liquid can be water, milk coffee lemon juice etc...

Directions – In a medium bowl, stir the sugar power and liquid together until smooth and adjust the consistency accordingly because it should be piped out into the solid baked cake. You can add your desired colour to the icing.

White icing
Ingredients
• 4 cups sugar
• 1 cup shortening
• 2 tablespoon water
• 1 teaspoon clear imitation vanilla extract
• 3 tablespoons of corn syrup

Directions – In a large bowl combine the sugar shortening, water and vanilla. Beat on low speed still they combine and continue the process beating in high speed for 5 minutes and you are done. If you’re using for decorating purpose just add little butter to it or only for icing the cake then add corn syrup.

Royal cake icing recipe
Ingredients
• 4 egg whites
• 1/2tsp.lemon juice
• 2lbs.confectionerssugar

Direction – Combine egg white and lemon juice in a bowl and add small amount of sugar until the icing is completely smooth and forms a peak. When covering the cake with thin royal icing, apply thin coasts allow to set before applying the next coat or decorating it this icing tends to dry fast so use small quantities at a time.

Boiled Icing
Ingredients for 8” cake
• 4cup sugar
• 2cup water
• 4egg whites
• 1teaspoon cream of tartar
• 2teaspoon of vanilla

Direction – Combine sugar and water in sauce pan. Cover and cook for 3mintues, allowing the steam to wash the sugar crystals down. Uncover the pan and place a candy thermometer into the mixture and check the reading it should be 240 degree. The syrup should create a thin thread and roll down. Then you take a bowl and beat the egg whites and salt until foam is formed and add syrup constantly with the beating egg whites add cream and tartar and vanilla and frost the cake immediately.

The same can be prepared alternately using the corn syrup which becomes another cake icing recipe.

Chocolate cake icing recipe
Ingredients
• 11/2 cups of icing sugar
• ¼ cup of cocoa powder
• 50g butter melted
• 2tablespoon milk

Place all the above into a medium size bowl and beat them still they completely combine, do it at least for 1minute. This will give you an icing to top at least 8” cake.
